Tricolore balsamic tomato and onion salad

Summertime tomatoes are fresh and beautiful in the UK and although not as flavourful of many of their European cousins, if you source them locally and high quality they can really be a stand alone dish.

We got hold of three different colours from our local grocer all bursting with flavour. This salad is so simple but so effective; jazzing up any plate visually and taste-wise with the sharp tang of balsamic and onions.

  1. Wash the tomatoes thoroughly then cut them into halves or thirds depending on how big the are and whack them in your serving bowl.
  2. Finely slice the onion and add that to the mix along with the vinegar and oil.
  3. A big crack of black pepper and some sea salt to taste. DONE.

We wish we could say it was more complex than that but hey, some things are better left in their most natural state. If it ain’t broke…
